I'll have an insulin shot to go, please.



I got LOTS of emails after I posted about the delicious carb-coma inducing bread that I make.

And none of them hate mail, surprisingly.

Seems that all of you like bread as much as me.

I, myself, have serious bread issues. I am incapable of eating bread that comes from the grocery store. I think it tastes nasty, has no real flavor, and the texture reminds me of cardboard.

I mean, if I'm going to give up taste, I might as well just eat healthy foods and toss out the cookie dough.

Bwaaahhhh! As if.

ANYhoo, I posted a few years ago (can't find the post or I'd link) about the beautiful bread machine that had changed my life (and put my local Great Harvest out of business). After making multiple loaves per week for a couple of years, the poor thing died about a month ago. Not wanting to rush out and spend a few hundred bucks the month before Christmas on an appliance of all things, I started to experiment with making my own bread. I tried several recipes and each received two greasy thumbs up from the people around here.

This recipe was settled on as a favorite, and I've been making it ever since. It takes maybe eight minutes of my time, and then sits on the counter and does all the work by itself. Every few days, I make another couple of loaves. It's delicious and I'm in love with it.

  2. Oh, I get it... "I need that bad boy"... You're "KNEADING" the bread. Wow, that is very Klever. Get it, I spelled clever with a K, to go along with your kneading joke. I'll bet that you could go write funny jokes for Jay Leno, because I'm still peeing my pants laughing because your joke was so funny.

    I think a good picture would have been you needing, oops I mean KNEADING, the bread with your feet. Because your knasty toes are a reocurring theme on your KBLOG.

    No really, there is still pee coming out because it was that funny.

    What I don't get, is why you would want to fake punch me?

  3. Ooh, this looks delicious. Maybe I'll give it a try. Or better yet, maybe I'll let my husband give it a try! Things taste better to me when I know someone else has slaved over it.

  5. can i do it in the machine? i do not have time to do bread from scratch. i just found a recipe with half whole wheat, half white and have struggled to find the time for even that one. i too am a bread freak. the heartier, the better. we have a new bakery in town, and it's $4-$6 a loaf, but it is like god himself baked it up. i pay it willingly.
    anyway.
    when i find the time and try my nex machine recipe out, if it fails, i want to know if this one would work.

  9. The only dweeb here is my brother, Dan.

    I use white flour. You can use wheat, but you have to add gluten to make sure it rises.

  10. As soon as I get more butter--I'm making those loaves. Nothing beats homemade bread on winter days! (I also want to say that I am rarely out of butter, but used about 6 sticks on Sunday dinner--I wouldn't want you to think I'm one of those people who don't believe in butter!)
    And Dan cracks me up--almost as much as you do!

  12. Oh my yumminess! When I have my own kitchen soon I will have to try. I've never ever made bread. But this sounds pretty easy. How long do you knead it for? I go to a popular bakery here and buy bread sometimes. Bread is manna from heaven!!

  16. My super good friends own the local Great Harvest. It is my duty to support them.

    Of course I typically buy their wheat bread. Nothing halfway nutritious will ever be baked in my kitchen.

  21. I have a perfectly good breadmaker that has only been used once--practically begged for it for Christmas last year. That's how much I'm afraid of yeast--bread just doesn't work out of me.

    I'm going to give this bread a try. When you say beat it--do you mean with a mixer? And then work it on the counter?

    once question - to get wheat bread, what is the ratio of wheat flour to white flour?

  26. I have never made it with wheat flour, but I would probably start with half wheat/half white. You'll need to add 1-2 tsp of gluten to get the wheat flour to rise, but everything else would stay the same.

  28. Yummy! Nice photos. Your bread looks soo good. I need to make bread this week. It has been since just before Christmas. I add what's called oat fiber to mine to make me feel like it is a little healthier. It probably doesn't make a difference with the health aspect, but it makes me feel better eating it. :)

  37. I just got back from Goodwill where lo & behold, there were two nice, glass Pyrex loaf pans for a dollar each. I think it was destiny. I do have one quick question. When you beat the dough do you use the regular beater or the dough hook? Can't wait to make some of this bread tomorrow!
