Salsa Chicken Burritos

Lisa has given me permission to share her award-winning recipe. May your taste buds enjoy the party you will be giving them:

Salsa chicken burritos

Put frozen chicken breasts (boneless skinless) in your crockpot. I used 3-4 breasts. Dump in one jar of bottled salsa (Lisa uses Pace Picante medium. I went with the mild due to the wimpiness of the taste buds around here).

Fill the empty jar about halfway with water to rinse it out and add it to the crockpot.

Let it cook on low all day. The chicken falls apart and is so tender and flavorful. Pull it apart with a fork. Serve on warm tortillas with cheese and sour cream (or whatever toppings you want).

My children DEVOURED this and begged for seconds, even though they could see tomatoes, onions, and peppers. (Take that, Jessica Seinfeld!)

That has never before happened in the history of the world.

And that, dear internets, is why she won (that and the absolute simplicity of her no-fail, little effort entry that embodies my cooking skills completely).

  4. I'm most definitely going to try this. I've never had luck with chicken crock pot recipes in the past (always too dry) but this one sounds yummy enough to change my cooking ways. And my family's taste buds would be all for that :)

  7. I actually made something similar to this last night. Instead of just salsa, put together a can of tomato soup, crm. chicken soup, chili powder and salsa...It's like a homemade red sauce. And I wasn't smart enough to dump it in the crock pot, though I will have to give that a go...I just put the chicken is a baking dish and poured the sauce on top and baked for an hour.
    I'd LOVE more recipes when you get the ok!

  9. Hey, I make this recipe but I add a can of black beans and we eat it with rice~but I am going to try it with tortillas. Not having to cook rice right before dinner is a good thing, no? (That's my laziness coming out.)

  18. Thank you! I already got my crock pot out. My kids will love this but the husband won't. Nathan hates tomatoes so he can have some leftover whatever from the deep dark recesses of the fridge.

  21. I've tried something like this with adding black beans, corn and green enchilada sauce along with the salsa. I love that it cooks its little heart out in the crock pot after I SLAVED dumping everything in. This version is soupier, so is good over tortilla chips like soup.

    I'd love a batch of recipes whenever you get them ready. My tummy is rumbling!

  35. Cindy here... MMMM, I get hungry just thinking about these! We have a recipe like this one - except ours has a little bit higher fat content. Once the chicken has been pulled apart, it is mixed with 8 oz cream cheese. They are great with the burritos, and the leftovers are wonderful for making a tasty chicken salad. I'll have to try it without the cream cheese. It would be quite a bit healthier! Thanks for the recipe!

  37. oh glory be. i made these last night for my boyfriend and his friends to eat "whenever" during football, and it was SO lovely to not have to get up and sort dinner. i put it in before church, and then i didn't have to think AT ALL when it came to be dinnertime.
